Introducing our Head Chef

Claire Nicholls has been with Castle House for many years. A local girl, Claire has always been passionate about food, cooking from the age of six! She trained at Hereford Technical College and then at the acclaimed Birmingham College of Food. While living in Hong Kong for two years, Claire discovered a love for Asian food which has had a great influence on much of her cooking, but she is steeped in her roots, sourcing as most of her produce from Herefordshire and the Marches.

Her menus showcase the seasonal produce which abounds in this region and she works with very committed local producers, not least the hotel's kitchen garden on the family farm at Ballingham Hall, and will create magical menus from of the boxes of fresh fruit and veg which are delivered straight to the kitchen door.

During her reign as Head Chef at Castle House, the restaurant has been awarded 2 AA Rosettes, and Claire is quietly proud to be one of the most acclaimed female head chefs in the UK.
